Manchester Tart

This traditional dessert is a tart with a short crust pastry base, coated in jam (usually raspberry) and desiccated coconut, and then filled with custard. Some recipes call for the coconut to be on top of the custard rather than with the jam.

My recollection from school dinners, where this was a frequent offering, is that the custard was pink.


Geography

Manchester is a large conurbation in North-West England. Whether the tart has any real connection with the city I cannot say.
