Bubble and Squeak

Sometimes known just as bubble, this dish traditionally consists of fried leftovers from the Sunday dinner. The main ingredients are usually potatoes and cabbage, although other left-over vegetables may be added as available. The ingredients are mixed in a frying pan and fried until the outside is crispy, and served either as part of a breakfast fry-up or as an accompaniment to the cold meat leftovers. Supermarkets sometimes have tinned and frozen versions available.

The name comes from the noise of the cooking process.

I think it originates from south-east England, but is known over the whole country.
